The BEST Protein Packed Low Carb/Gluten Free Pizza

By now we have all seen cottage cheese taking the internet by storm ha! While I like my share of it, I couldn't help but start rolling my eyes every time a new one would pop up. Well, last night my curiosity got the best of me so here we are.... This is by far my favorite high protein/keto pizza to date!

You will need:

  1. Either 8oz cooked chicken or 1 12.5 ounce can of chicken drained (I used a can of Trader Joe's Premium Chunk White Chicken)
  2. 8 oz cottage cheese
  3. 2 eggs
  4. 1/2 cup finely grated Parmesan cheese
  5. 1/2 cup shredded mozzarella cheese
  6. 1/2 teaspoon Italian Seasonings
  7. 1/2 teaspoon onion powder
  8. 1/2 teaspoon garlic powder
  9. 1/2 teaspoon salt


How To:

  1. Preheat your oven to 400 degrees
  2. Line a baking sheet pan with parchment paper (I used a jelly roll pan because it keeps it from slipping away when you flip it over )
  3. have a second pan handy with parchment paper
  4. Mix all ingredients together (If using cooked chicken make sure to cut up the pieces prior to mixing)
  5. Spread the mixture out on your pan to about 1/4 inch thickness
  6. Bake for 15 minutes
  7. Using your other lined pan flip the crust over and then cook for another 10 min
  8. Top with your favorite sauce and toppings. In the picture I used sugar free BBQ sauce, bacon, onions and jalapenos
  9. Cook for another 5-6 minutes
  10. Enjoy!
